TN : Quimera 2011, Achaval-Ferrer, I.P. Mendoza, Argentina
This wine is a blend of 27% Malbec, 25% Cabernet Franc, 24% Cabernet Sauvignon, 20% Merlot, and 4% Petit Verdot. The average yield per plant was 1.3 tons per acre (18 hectolitres per hectare). All of the grapes were manually harvested between March 15th and March 29th 2011. Primary fermentation was performed in small tanks, blended, and underwent malolactic fermentation in French oak barrels of which 40% were new and 60% one year old. The wine was then aged in barrel for one year. The wine was bottled between August 21st and 27th 2012. 8583 cases of this wine were produced. The pH is 3.68 and TA is 6.60 grammes per litre.
