TN : Quimera 2011, Achaval-Ferrer, I.P. Mendoza, Argentina
This wine is a blend of 27% Malbec, 25% Cabernet Franc, 24% Cabernet Sauvignon, 20% Merlot, and 4% Petit Verdot. The average yield per plant was 1.3 tons per acre (18 hectolitres per hectare). All of the grapes were manually harvested between March 15th and March 29th 2011. Primary fermentation was performed in small tanks, blended, and underwent malolactic fermentation in French oak barrels of which 40% were new and 60% one year old. The wine was then aged in barrel for one year. The wine was bottled between August 21st and 27th 2012. 8583 cases of this wine were produced. The pH is 3.68 and TA is 6.60 grammes per litre.

TN : Gris Blanc 2011, IGP Pays d'Oc, Gerard Bertrand, Tautavel, France
This wine is a blend of Grenache Gris and Grenache Noir. The vines for these grapes are located in the Tautavel area, between the Mediterranean sea and Pyranees mountains, 30 km north of Perpignan in the south of France. All of the grapes were picked by hand and pressed directly. The wine was matured on fine lees for several weeks before bottling.
This wine was sealed with a screwcap.

TN : La Celia Heritage Single Vineyard Malbec 2008, Finca La Celia, Uco Valley, Mendoza, Argentina
The grapes underwent a cold maceration for three days at nine degrees. Alcoholic fermentation lasted 12 days using selected yeasts at an average temperature between 26 and 27 degrees. The total maceration was 28 days. The wine underwnt 100% malolactic fermentation. This wine was aged for 12 months in first use French oak barrels and 8 months in bottle before release. There are 5.65 grammes per litre of acidity, 2.80 grammes per litre of residual sugar, and a pH of 3.65.

This is a vin de nuit meaning that it has gotten it's colour by spending one night in contact with the skins. The yield was 8 tons per hectare. The wine has seen no oak. 7,000 cases were produced. The total acidity (H2SO4) is 3.80 grammes per litre, the residual sugar is 3.99 grammes per litre, the pH is 3.08 grammes per litre, the volatile acidity is 0.44 grammes per litre, and the free SO2 is 0.031 grammes per litre.

The grapes for this wine come from three valleys; the Pedernal valley at 1350 metres above sea level, the Zonda valley at 950 metres above sea level, and the Tulum valley at 650 metres above sea level. The grapes from the Pedernal valley were havested at the end of April 2010, the grapes from the Zonda valley at the beginning of February 2010, and the grapes from the Tulum valley at the end of February 2010. The wine was aged in French and American oak barrels for 18 months and a further 8 months in bottle at a controlled temperature.

Agricola Punica is a joint venture between Sebastiano Rosa, Sardinian winery Cantina di Santadi, Tenuta San Guido, Santadi President Antonello Pilloni and legendary Tuscan consulting oenologist Giacomo Tachis.
Sebastiano Rosa, oenologist and winemaker at Tenuta San Guido and Santadi, the highly respected Sardinia cooperative, represent the majority ownership, with forty percent each. TN : The Coffeestone Cabernet Sauvignon 2011, Graham Beck Wines, Stellenbosch, South Africa
The origin of this wine’s curious name is a reference to the Coffeestone Vineyard in Firgrove, Stellenbosch where the fruit for this wine was sourced. The soil where these old low yielding bush vines are planted is composed of deep granite gravel on laterite (coffeestone) and weathering clay (saprolite). The grapes were hand-harvested at optimum ripeness and then fermented in open stainless steel tanks with regular punch downs to ensure optimum extraction and purity of fruit. The wine was matured for 22 months in new fill French Oak barrels.
