The temperature during fermentation peaked at 31 degrees. The cap was punched down twice daily. The must underwent a six day post-fermentation. The grapes underwent a five day pre-fermnetation maceration. The wine spent ten months in  100% French oak barrique. 10% of the oak was new with the balance being older wood. The pH of the wine is 3.66 and the titratable acidity is 6.7 grammes per litre. This wine was sealed with a screwcap.
