The grapes for this wine were all hand-harvested into small bins. The must was subjected to a 5 to 7 day cold-soak at 6 to 8 degrees followed by alcoholic fermentation in stainless steel tanks at 28 to 32 degrees. The post-fermentation maceration consisted of 20 days of skin contact. The wine has been aged for five months in multiple-use French oak barrels and finally botted in September 2007.
