TN : Errazuriz Don Maximiano Founder's Reserve 2007, Vina Errazuriz, Valle de Aconcagua, Chile
This wine is a blend of 82% Cabernet Sauvignon, 6% Petit Verdot, 6% Cabernet Franc, and 6% Syrah. The Cabernet Sauvignon was selected from the Max I, II, and V vineyards of the Don Maximiano Estate which was planted in 1978 (Max I) and 1993 (Max II and V). The Syrah and Petit Verdot are sources from Max I, and the Cabernet Franc is from vineyards in the mid-section of the Aconcagua Valley. The vineyards are planted in 5 to 25 degree slopes that face North and North East. The soils in the Max I vineyard consist of a thin layer of pulverised granite, while those of in Max II are of colluvial origin with 30 % to 40% stone compound producing vines of low-to-medium vigour. Max V consists of deep alluvial soils with 50% stones producing well-balanced vines of moderate vigour. The vines are trellised to vertical shoot positioning and are spur or cane pruned. Max I is located at 550 metres above sea level, Max II is located at 580 metres above seal level, and Max at 600 metres above sea level. The climate is Mediterranean with a long dry season and winter rainfall. The Petit Verdot was picked in the third week of April 2007, the Cabernet Sauvignon in the third and fourth weeks of April 2007, the Syrah between the 30th of April and 7th of May 2007, and the Cabernet Franc in the third week of April 2007.
The grapes were sorted using sorting table, removing leaves and stems. The grapes were fermented in stainless steel tanks at a temperature between 24 and 30 degrees; 5% of the grapes were fermented using native yeasts. Three pumpovers were carried out daily at 0.5 to 1.5 times vat volume. Maceration lasted 20 to 35 days at a temperature between 24 and 28 degrees. All the lots were aged for twenty months in 100% new French oak barrels. The pH is 3.49, Total Acidity is 6.57 grammes per litre (Tartaric Acid), and 2.88 grammes per litre of Residual Sugar.
